客庄桔醬的製作工序繁多,首先將果皮與果肉分離後,還必須洗桔子皮,將果皮內層的薄膜洗掉,清洗務求到位,以避免產生苦澀味,果肉部分則需將籽另外分開,添加鹽巴殺菁,並進行熬煮約2~3小時,製作完成裝瓶後需經高溫殺菌,製程完全不添加人工甘味、防腐劑及任何化學物質,樸實無華,卻飽含著人生酸甘甜的滋味盡在其中,桔醬的運用方式亦是富變化,可用來拌飯、抑或是做為肉品與蔬菜的沾醬,甚至加入火鍋做為湯底,都相當合味,就等你來細細體會。
